Looking to transform my 2000 KDX 220 standard suspension from fast open desert, to more slow rocky hard enduro and single track...Anyone have any Clicker and fork oil recommendations.

Make very large changes on the clickers. Generally, that is a low-speed compression bypass limiter, so "landing from big jumps" and "bottoming out" would be adjusted there somewhat. Changes for running over rocks and logs would be "high-speed compression". This is where the valving on the base valve comes into play more heavily, though both work together as a system. Have you seen some threads on the "shim mod" where people remove a couple of shims from the stacks on 1995+ 200/220R?
5 to 7.5 weight on the oil, generally five
run the oil level toward the lower side. If bottoming out, increase oil/reduce air gap.

What is your weight? In my experience the clickers on the shock won't get you want you want for single track but I'm very light
