My concern it's breaking an aluminum valve tightening the nut on the left side.
I should probably stay off the sauce during assembly!

You shouldn't break it as it's designed to be done that way.

I haven't used US Chrome for years, back when I was racing street bikes, sucks to hear they went that way, they used to be really good to deal with. Have never heard anything but good about Millenium and Powerseal.

I liked using powerseal because they have a tool that tracks your cylinder through the facility
